- 1 lb (450g) ground beef
- 1/2 lb (225g) ground pork (optional)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or parsley
- 1 tablespoon olive oil
- 1 cup mushrooms, sliced
- 1 tablespoon butter
- 1 tablespoon additional Worcestershire sauce (for mushrooms)
- 4–6 slices of Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.
- In a large bowl, combine ground beef, ground pork if using, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and dried herbs. Mix gently until well combined.
- Form the mixture into a loaf and place on the prepared baking sheet or in the loaf pan. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
- While the meatloaf bakes, heat olive oil in a pan over medium heat. Sauté the mushrooms until golden, about 5-6 minutes. Add butter and additional Worcestershire sauce, cooking for 2 more minutes.
- After baking, top the meatloaf with Swiss cheese slices and the sautéed mushrooms. Return to the oven for 5-7 minutes or until the cheese melts.
- Remove the meatloaf from the oven, let it rest a few minutes, garnish with chopped parsley, and serve hot.
