Ingredients
8 oz (225g) sliced cremini mushrooms π
1 tablespoon olive oil π«
1 tablespoon butter π§
1 teaspoon Italian seasoning πΏ
1/2 teaspoon salt π§
1/4 teaspoon cracked black pepper β«
2 oz (60g) sun-dried tomatoes, drained of oil, and chopped (half a small jar) π
4 cloves garlic, minced (or 1 tablespoon minced garlic) π§
1/4 cup (60ml) low-sodium chicken stock π
1 tablespoon fresh chopped parsley πΏ
1/2 teaspoon red chili pepper flakes (optional) πΆοΈ
Instructions
1οΈβ£ To make the garlic mushrooms stir-fry: In a large pan or skillet, melt the butter and add the mushrooms. Season with salt and pepper and cook until slightly golden on the edges (about 5 minutes), stirring from time to time. π
2οΈβ£ Add the minced garlic and sun-dried tomatoes and sautΓ© for 2-3 minutes. Add Italian seasoning; sautΓ© until fragrant for one minute more. π π§
3οΈβ£ Deglaze the skillet with chicken stock, and allow the sauce to reduce a little if you like. π
4οΈβ£ Adjust seasoning with salt and pepper to your taste. Garnish with fresh parsley and red chili pepper flakes (if using). Serve the garlic mushrooms with sun-dried tomatoes immediately. Enjoy! πΏπΆοΈ
