Ingredients

¾ cup rolled oats
¾ cup unsweetened coconut flakes
½ cup dried cherries
½ cup chopped pecans
⅓ cup mini chocolate chips
⅓ cup natural unsalted peanut butter
¼ cup honey
⅛ cup chia seeds


Instructions

In a large mixing bowl, combine the rolled oats, coconut flakes, dried cherries, chopped pecans, mini chocolate chips, peanut butter, honey, and chia seeds. Stir until all ingredients are well incorporated.
Chill the mixture in the refrigerator for 30 minutes to make it easier to shape.
Using clean hands, take approximately 2 tablespoons of the mixture and roll it into a ball. Place each ball on a baking sheet lined with parchment paper.
Repeat the process until all the mixture is used. Chill the energy bites in the refrigerator for another 30 minutes.
Transfer the energy bites to an airtight container and store them in the refrigerator for up to 1 week.
