Ingredients
1/2 cup evaporated milk
1/2 cup light corn syrup
1.5 cups granulated sugar
1 cup brown sugar
1/2 cup unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups sweetened shredded coconut
2 cups pecans
Instructions
In a medium saucepan, combine the granulated sugar, brown sugar, evaporated milk, corn syrup, and butter. Heat over medium heat, stirring until fully blended.
Bring the mixture to a boil and maintain a rolling boil for 3 minutes. Remove from heat.
Stir in the vanilla extract and salt.
Gradually fold in the shredded coconut and pecans, stirring for 3-4 minutes until the mixture is well combined and begins to thicken slightly.
Use a tablespoon or small cookie scoop to portion out the mixture onto wax paper-lined baking sheets.
