Description

The No-Bake Pumpkin Bites are a delightful combination of creamy pumpkin puree, nutty richness, and warm spices, all wrapped up in a chocolatey coating. These bites capture the essence of fall in every mouthful, offering a perfect balance of sweetness and spice without the need to turn on your oven.


Ingredients

1/2 cup nut butter
1/4 cup pumpkin puree
3 tbsp maple syrup
1 tsp vanilla
1/4 cup coconut flour (or 3/41 cup almond flour)
1 tbsp pumpkin pie spice
1/4 tsp salt (if nut butter isn’t salted)
1/2 cup mini chocolate chips
1 cup melted chocolate for dipping


Instructions

In a large bowl, mix together nut butter, pumpkin puree, maple syrup, and vanilla until smooth.
Add in coconut flour (or almond flour), pumpkin pie spice, and salt. Stir until well combined.
Gently fold in the mini chocolate chips.
Refrigerate the mixture for 10 minutes to firm up.
While the mixture is chilling, melt the chocolate for dipping. Add 1 tsp of coconut oil to the chocolate and melt in 30-second intervals in the microwave, stirring in between.
Remove the mixture from the fridge and roll it into small bite-sized balls.
Using a fork, dip each ball into the melted chocolate, ensuring it’s fully coated.
Place the dipped bites onto a parchment-lined baking sheet.
Refrigerate or freeze the bites until the chocolate is set and firm.
Store in the fridge or freezer until ready to enjoy.
