8-ounce package cream cheese, softened
½ cup caramel ice cream topping
½ teaspoon coarse ground sea salt
32 Oreo cookies (4 packets)
6 ounces strong coffee, cooled (sweetened if desired)
4 cups Cool Whip, divided
Decoration: caramel and chocolate syrups, extra sea salt


Instructions

Line an 8-inch square baking tray with non-stick paper.
In a bowl, mix the caramel topping with sea salt.
Beat the cream cheese with the caramel mixture until creamy. Fold in 3 cups of Cool Whip.
Dip 16 Oreo cookies in coffee and place in the tray.
Spread half of the caramel cheesecake mixture over the cookies.
Repeat with the remaining cookies and cheesecake mixture.
Cover with 1 cup of Cool Whip and refrigerate until set.
Decorate with caramel and chocolate syrups, and a sprinkle of sea salt. Cut into 9 squares using a hot knife.
