Description

This Flourless Oatmeal Apple Cake is a wholesome and delicious option for breakfast or dessert. 1 cup oats
1 large apple, peeled and chopped
3 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 tablespoons yogurt
2 eggs
1 tablespoon butter or coconut oïl


Instructions

Preheat your oven to 180°C (350°F).
In a blender (or using a hand blender in a bowl), combine all the ingredients except for 1/4 cup of the oats. Blend until the mixture is smooth.
Stir in the remaining 1/4 cup of oats to give the cake some texture.
Line a small baking pan with parchment paper and pour the batter into the pan.
Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely, then slice it. Store the slices in an airtight container in the fridge for at least an hour. The cake gets better the longer it chills, so enjoy it for breakfast or dessert!
