  • Author: Dulcia
  • Total Time: 19 minute
  • Yield: 24 cookies 1x

Description

Delight in the wholesome goodness of Oatmeal Raisin Delights, a recipe that brings together the chewy texture of oatmeal cookies with the natural sweetness of raisins, enhanced by a hint of cinnamon. These cookies are not only perfect for satisfying your sweet tooth but also offer a healthier snack option due to their use of avocado oil and unsweetened applesauce.

Ingredients

Scale
  • 2 large egg whites
  • 3/4 cup avocado oil
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar
  • 2/3 cup dark brown sugar
  • 1/4 cup unsweetened applesauce
  • 2/3 cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour

Instructions

  1. Mix Wet Ingredients and Sugars: In a large bowl, beat the egg whites and avocado oil together with the salt, granulated sugar, and dark brown sugar until well combined.
  2. Add Flavor Enhancers and Leavening Agents: Add the unsweetened applesauce, raisins, vanilla extract, baking soda, and cinnamon to the mixture and stir until everything is blended.
  3. Incorporate Oats: Stir in the old-fashioned oats until they are evenly distributed throughout the mixture.
  4. Mix in the Flour: Gradually add the all-purpose flour to the mixture and mix until just incorporated, taking care not to overmix.
  5. Chill and Prepare for Baking: Cover the dough and chill it in the refrigerator for at least one hour. Meanwhile, preheat the oven to 375 degrees F (or 350 degrees F for convection).
  6. Bake the Cookies: Form the chilled dough into 1 1/2 inch balls and place 12 on each baking sheet. Bake for about 13 minutes. Allow to cool slightly on the sheet before transferring to a cooling rack.
