Description

These Old-Fashioned Date Balls are a delicious throwback to simpler times. Made with finely chopped dates, crunchy pecans, and crisp rice cereal, these treats are the perfect balance of chewy and crunchy. A light dusting of powdered sugar adds just the right amount of sweetness, making them irresistible to snack on!


Ingredients

½ cup (1 stick) butter
¾ cup white granulated sugar
8 ounces pitted dates, finely chopped
1 cup pecans, finely chopped
1 tsp vanilla extract
2 cups crisped rice cereal
Powdered sugar, for dusting or Rolling


Instructions

Finely chop the dates and pecans, preferably in a food processor for consistency. Avoid using pre-chopped dates as they contain coatings that prevent the mixture from sticking.
In a medium saucepan over low heat, combine butter, sugar, and dates. Stir continuously until the sugar fully dissolves.
Remove from heat and stir in vanilla extract, pecans, and cereal. Mix thoroughly with a non-stick spatula.
Allow the mixture to cool slightly, then shape into 1-inch balls using your hands.
Place the balls onto a parchment-lined baking sheet and lightly dust with powdered sugar or roll them in a bowl of powdered sugar for a sweet coating.
Store in an airtight container and enjoy!
