Chicken:
1.2 lb chicken breasts, skinless, boneless (2 chicken breasts, sliced horizontally)
¼ teaspoon salt
Freshly ground black pepper
1 tablespoon flour
2 tablespoons olive oil
Mushrooms:
1 tablespoon olive oil
8 oz cremini mushrooms, sliced
Cream Sauce:
1 cup heavy cream
5 cloves garlic, minced
4 tablespoons fresh thyme, snipped

Instructions

Cook Chicken: Season chicken breasts with salt and pepper. Dredge in flour. Heat skillet over medium, add olive oil and chicken, cook each side for 5 minutes until golden and cooked through to 165°F (74°C). Set aside.
Cook Mushrooms: In the same skillet, add olive oil, mushrooms, and salt. Cook for 3-5 minutes until mushrooms release juices. Remove ⅓ for topping.
Creamy Sauce: To the skillet, add heavy cream and garlic. Reduce to a simmer, cook until sauce thickens slightly. Stir in half the thyme.
Assembly: Return chicken to skillet, heat through. For serving, top chicken with reserved mushrooms, remaining thyme, and season to taste.
