Ingredients
For Marinating the Chicken:
- 4 chicken thigh fillets (around 600gm) π
- 2 tbsp lemon juice π
- 1 tsp minced garlic (garlic paste) π§
- 1 tsp minced ginger (ginger paste) π«

- 1/2 tsp red chili powder πΆοΈ
- 2 tsp garam masala π

- 2 tbsp ghee (or oil) (I used 1 tbsp ghee and 1 tbsp oil) π§
- 2 cups rice (I used basmati rice), rinsed π
- 4 cups chicken stock (or chicken broth) π²
- Juice from 1 large lemon π
- 1/4 cup coriander (cilantro) leaves πΏ
- 1/4 cup mint leaves π±
- Salt to taste π§

Instructions
Step 1: Marinate the Chicken
- Combine Ingredients: In a bowl, mix together 2 tbsp lemon juice, 1 tsp minced garlic, 1 tsp minced ginger, 1/2 tsp ground turmeric, 1/2 tsp red chili powder, 2 tsp garam masala, and 1 tsp soy sauce. Season with salt and pepper.

3οΈβ£ To the same pan, add rice, chicken stock, lemon juice, coriander leaves, and mint leaves. Stir. Place chicken on top in one layer. Increase the heat to high, and bring it to a boil. Reduce heat to low, cover with a lid, and simmer for 10-15 minutes or until rice is cooked and liquid absorbed. π₯π²
