  • 1 pound Italian sausage
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 ½ cups chicken broth or stock
  • 2 cups shell pasta
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 1 cup shredded mozzarella cheese + extra for topping if desired
  • ¼ cup grated parmesan cheese

Instructions

  1. In a large skillet, cook the sausage with the chopped onion over medium heat. Continuously stir until the sausage is well-browned and the onions are translucent, approximately 10 minutes.
  2. Add the minced garlic to the skillet, stirring constantly, and cook for another minute until the garlic is fragrant.
  3. Incorporate the crushed tomatoes, chicken broth, shell pasta, tomato paste, and Italian seasoning into the skillet. Stir the mixture thoroughly and bring it to a boil.
  4. Once boiling, reduce the heat to a simmer and continue cooking for about 10 minutes, or until the pasta is tender. Stir occasionally to prevent the pasta from sticking to the skillet.
  5. Remove the skillet from heat. Stir in the shredded mozzarella and parmesan cheeses until they are completely melted and evenly distributed throughout the dish.
  6. Optionally, sprinkle additional mozzarella cheese on top before serving for a cheesier finish.
