Description

These Orange and Cardamom Muffins are a delightful balance of citrusy brightness and warm, aromatic spice. Wet Ingredients:
3/4 cup granulated sugar
2 eggs
1/2 cup vegetable oil
1/2 cup milk
1/4 cup orange juice
Zest of 1 large orange, grated
1 tsp ground cardamom
Dry Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Topping:
3 tbsp sparkling sugar (or regular sugar)


Instructions

Preheat your oven to 350°F (175°C) and butter a muffin tin, or line it with muffin tin liners.
In a large bowl, whisk together all the wet ingredients (sugar, eggs, vegetable oil, milk, orange juice, orange zest, and cardamom) until well combined.
In a separate bowl, whisk together the dry ingredients (flour, baking powder, baking soda, and salt).
Add the dry ingredients to the wet ingredients and fold them together gently until no dry bits of flour remain. Be careful not to overmix.
Pour the batter into the prepared muffin tins, filling each cup about 3/4 full. Sprinkle the tops with sparkling sugar.
Bake in the preheated oven for 20-22 minutes, or until the muffins have risen and the edges start to turn golden brown. A toothpick inserted into the center of a muffin should come out clean or with a few moist crumbs, but not wet batter.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
