Ingredients
1½ sticks unsalted butter, softened
1¾ cups all-purpose flour
½ cup sugar
5 tsp orange zest (approx. zest from 2 large oranges)
⅛ tsp salt
½ tsp vanilla extract
¼ cup semi-sweet mini chocolate chips
Instructions
Combine flour and salt in a small bowl and set aside.
In a mixer bowl, combine sugar and orange zest. Use the back of a spoon to mash together until the sugar is moist and fragrant.
Add softened butter and vanilla extract to the sugar mixture. Mix on low speed for 1 minute.
Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Fold in the mini chocolate chips.
Form the dough into a flat disc and chill in the refrigerator for 30 minutes.
Preheat oven to 350°F (175°C).
Roll the dough out to ½ inch thickness and use a 2-inch cutter to form cookies.
Place cookies on a baking sheet and chill in the freezer for 10 minutes to minimize spreading.
Bake for 25-28 minutes or until the bottoms are golden brown.
Let cool completely on a wire rack before serving.
