  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk, room temperature
  • Zest of 1 large orange, divided
  • 1/4 cup orange juice, freshly squeezed
  • 6 Tbsp unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups fresh cranberries, rinsed and patted dry
  • 1/2 Tbsp all-purpose flour
  • 1 cup powdered sugar
  • 1 1/2 Tbsp freshly squeezed orange juice
  • 1 tsp orange zest, reserved from the orange above

Instructions

  1. Preheat the oven to 350˚F. Butter and flour a 6-cup (8 1/2 by 4 1/2) bread loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Combine the milk, most of the orange zest (save 1 tsp for the glaze), and orange juice in a measuring cup.
  4. Cream the butter and sugar in a large mixing bowl until light and fluffy, then beat in the eggs one at a time.
  5. Alternate adding the flour mixture and milk mixture to the creamed butter, starting and ending with the flour mixture.
  6. Toss the cranberries with 1/2 Tbsp of flour and fold them gently into the batter.
  7. Transfer the batter to the prepared baking pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  8. Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  9. Mix the powdered sugar, 1 1/2 Tbsp orange juice, and reserved orange zest together until smooth.
  10. Adjust consistency with additional orange juice or powdered sugar if necessary.
  11. Drizzle the glaze over the cooled bread.
