16 ounces Italian sausage (casings removed, if applicable)
1/2 medium onion, chopped
4 cloves garlic, minced
1/2 teaspoon Dijon mustard
1/2 cup dry white wine
3 cups fresh baby spinach, packed
2 tablespoons fresh basil, chopped (optional)
Salt and pepper to taste
Freshly grated Parmesan cheese, for serving (optional)


Instructions

Boil a large pot of salted water and cook the orecchiette pasta until al dente, according to package directions.
In a large skillet, cook the sausage and onion over medium-high heat for 8-10 minutes until the sausage is thoroughly browned and cooked through. Drain excess fat if necessary.
Reduce the heat to medium. Add garlic and Dijon mustard to the skillet and sauté for about 30 seconds.
Pour in the white wine and let it reduce by half, which should take about 1-2 minutes.
Add the spinach and basil, and stir until the spinach has wilted.
Combine the cooked and drained pasta with the sausage mixture in the skillet. Toss well to integrate.
Season with salt and pepper. Serve with a sprinkle of freshly grated Parmesan cheese if desired.
