Oreo Crust
2 cups oreo crumbs (about 20 Oreos)
4 tbsp unsalted butter, melted
Oreo Cheesecake
3 packages cream cheese, room temperature (8 oz each, full-fat)
1 cup sugar
1 tsp vanilla extract
¾ cup oreo crumbs
8 chopped Oreos
3 large eggs
One oven-safe turkey bag (see instruction #1 under cheesecake)
Chocolate Ganache
½ cup heavy cream
1 cup chocolate chips (semi-sweet)

Additional Oreo pieces
Instructions
Crust: Preheat the oven to 350º F. Pulse whole Oreos in a blender until fine. Mix crumbs with melted butter and press into an 8 or 9-inch springform pan. Pre-bake for 10 minutes.
Cheesecake: Reduce oven to 325º F. Place springform pan in a turkey bag and roll the top down. Beat cream cheese, sugar, and vanilla until smooth. Mix in Oreo crumbs, pieces, and eggs one at a time. Pour over crust. Set pan in a larger roasting pan, add 1 inch of water, and bake for 70-80 minutes.
Ganache: Heat cream to a boil, pour over chocolate chips, let sit for 1 minute, then mix. Cool for 5-7 minutes.
Assembly: Spoon ganache over cooled cheesecake, add whipped cream and Oreos.
