Ingredients
1 1/2 cups rye flour
1 tsp ground ginger
1/2 tsp ground cloves
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking soda
1 tsp baking powder
2/3 cup honey
1/4 cup milk
3 tbsp sugar
1 egg
1/2 cup butter, softened
1 pinch salt
Instructions
Preheat your oven to 150 C (300F). Line a loaf pan with baking paper or grease it with butter. In a large mixing bowl, combine rye flour, ground ginger, ground cloves, cinnamon, nutmeg, baking soda, and baking powder. Stir in the honey. Blend on low speed with a handheld beater or stand mixer with a paddle attachment. Gradually add milk, sugar, egg, softened butter, and salt, stirring after each addition. Once well combined, transfer to the prepared loaf pan, smoothing the top with the back of a spoon. Bake for 45 minutes or until a skewer inserted into the center comes out clean.
