2 large chicken breasts
1/2 teaspoon garlic powder
Salt & pepper to taste
1/4 cup flour
2 eggs
2/3 cup panko breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 heaping teaspoon Italian seasoning
3 tablespoons olive oil, divided


Instructions

Preheat the oven to 400°F (200°C). Position the rack in the top third of the oven.
Cut the chicken in half lengthwise to have 4 thinner pieces. Pat dry with paper towels and season both sides with garlic powder, salt, and pepper.
Prepare three bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, parmesan cheese, and Italian seasoning.
Heat 2 tablespoons of olive oil in an oven-proof skillet over medium heat.
Coat the chicken pieces in flour, dip in egg, then coat with the breadcrumb mixture. Press the breadcrumbs onto the chicken to adhere.
Fry 2 chicken pieces at a time in the skillet for 2-3 minutes per side until golden. Use tongs for flipping. Add the remaining olive oil for the second batch.
Once all the chicken is fried, arrange all pieces in the skillet and transfer to the oven. Bake for 5 minutes or until fully cooked (165°F internal temperature).
Serve immediately.
