Ingredients
2 large chicken breasts
1/2 teaspoon garlic powder
Salt & pepper to taste
1/4 cup flour
2 eggs
2/3 cup panko breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 heaping teaspoon Italian seasoning
3 tablespoons olive oil, divided
Instructions
Preheat the oven to 400°F and position the rack in the top third of the oven.
Cut the chicken in half lengthwise to create 4 thinner pieces. Pat dry with a paper towel.
Season both sides of the chicken with garlic powder, salt, and pepper.
Set up three bowls for dredging: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, parmesan cheese, and Italian seasoning.
Heat 2 tablespoons of olive oil in an oven-proof skillet over medium heat.
Dredge the chicken first in flour, then in egg, and finally in the breadcrumb mixture, pressing to adhere.
Cook the chicken in the skillet for 2-3 minutes per side until golden, then transfer to a plate.
Add the remaining olive oil, and cook the remaining chicken.
Place all chicken pieces back in the skillet and transfer to the oven.
Bake for 5 minutes, or until the internal temperature reaches 165°F.
