Ingredients
4 cod fillets (about 5 ounces each)
1 large egg, beaten
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon red pepper flakes
Lemon wedges, for serving
Instructions
Preheat your oven to 425°F (220°C). Spray a baking sheet with non-stick spray or line it with parchment paper.
Place the beaten egg in a shallow dish.
In a second shallow dish, combine the grated Parmesan cheese, garlic powder, onion powder, smoked paprika, and red pepper flakes. Stir with a fork to mix the seasonings evenly.
Dip each cod fillet first into the beaten egg, ensuring it is fully coated. Then, press the fillet into the Parmesan mixture, coating both sides evenly.
Arrange the coated cod fillets on the prepared baking sheet.
Bake the cod for 10-12 minutes, or until the fish flakes easily with a fork and the Parmesan coating is golden and crispy.
Serve immediately with lemon wedges or tartar sauce, if desired.
