Crispy on the outside and tender on the inside, these Parmesan Roasted Potatoes are a delightful addition to any meal. The combination of garlic, smoked paprika, and parmesan cheese creates a savory flavor that’s irresistible. Tossed with fresh parsley and chives, these potatoes are not only delicious but also visually appealing. Ingredients
8 russet potatoes
2 cups ice
1½ tsp garlic powder
1 tsp smoked paprika
1 tsp kosher salt
1 tsp black pepper
½ cup olive oil
¼ cup shredded parmesan cheese
¼ cup grated parmesan cheese
2 tbsp parsley, chopped
2 tbsp chives, chopped
Instructions
Wash and cut the potatoes into thin round slices and place in a large bowl.
Fill the bowl with enough water to cover the potatoes, then add about 2 cups of ice and let sit for about 30 minutes.
Once the potatoes have soaked, remove them from the water and pat them dry with a paper towel.
Preheat the oven to 450 degrees Fahrenheit.
Place the dried potatoes in a large zip-top bag with garlic powder, paprika, salt, and pepper. Zip closed and shake well to coat the potatoes.
Add in the olive oil, close the bag, and shake again to coat evenly.
Remove the potatoes from the bag and lay them in a single layer on a parchment-lined baking sheet. You may need more than one baking sheet.
Bake for 35-40 minutes or until the potatoes are cooked through and are brown and crispy on the outside.
Remove and immediately transfer to a large bowl. Add in both types of parmesan cheese, parsley, and chives, and toss to coat.
Serve with ranch dressing or ketchup while hot.
