3 small zucchinis
2 eggs
1 pinch salt
Ground black pepper, to taste
2 cups Japanese panko bread crumbs
½ cup grated Parmesan cheese
Ranch dressing, for serving


Instructions

Preheat Oven: Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper and set aside.
Prepare Zucchini: Slice the zucchinis into 3-inch (7cm) long strips, about ½-inch (1cm) thick.
Prepare Egg Mixture: In a bowl, beat the eggs with a pinch of salt and a few dashes of ground black pepper.
Prepare Panko Mixture: In a large plate or shallow container, mix the panko bread crumbs and grated Parmesan cheese together.
Coat Zucchini: Working in batches, dip the zucchini strips into the egg mixture, making sure they are well-coated. Shake off any excess egg, then roll the strips in the panko and Parmesan mixture, pressing gently to ensure an even coating.
Bake: Place the coated zucchini strips on the prepared baking sheet. Bake in the preheated oven for 20 to 25 minutes, turning the zucchini fries and rotating the baking sheets halfway through the cooking time, until they are golden brown and crispy.
Serve: Serve the Parmesan zucchini fries immediately with ranch dressing on the side for dipping.
