- 1 pound ground beef
- 1 small onion, finely diced
- 2 carrots, finely diced
- 2 stalks celery, finely diced
- 1 15 oz can diced tomatoes, undrained
- 1 15 oz can dark red kidney beans, drained and rinsed
- 1 15 oz can cannellini beans, drained and rinsed
- 1 26 oz container beef stock (or 3 cups)
- 1 25 oz jar spaghetti sauce
- 2 teaspoon dried oregano
- 2 teaspoon dried parsley
- 1 teaspoon ground black pepper
- Salt and pepper to taste
- 1 cup ditalini pasta or your favorite pasta shape
Instructions
- Step 1: Brown the Beef In a large skillet sprayed with non-stick cooking spray, add ground beef. Cook over medium heat, breaking the meat up with a spoon, until browned, approximately 5 to 6 minutes.
- Step 2: Drain the Beef Once browned, transfer the ground beef to a colander to drain off the excess grease.
- Step 3: Combine Ingredients in Crock Pot Transfer the drained beef to a crock pot. Add onions, carrots, celery, diced tomatoes, kidney beans, cannellini beans, beef stock, spaghetti sauce, oregano, parsley, black pepper, and additional salt and pepper. Stir to combine.
- Step 4: Cook the Soup Set the crock pot to cook on low for 6-8 hours or on high for 4-5 hours. This slow cooking process allows the flavors to meld beautifully.
- Step 5: Add Pasta During the last 30 minutes of cooking, stir in the uncooked pasta. Continue to cook until the pasta is tender.
