  • 250 g (8.8 oz) pasta
  • 1 tablespoon olive oil
  • 400 g (1 lb) Italian sausage, casings removed, cut into bite-sized pieces
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 large garlic cloves, finely chopped
  • ¼ teaspoon red chilli flakes
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 200 ml (1 cup) chicken stock
  • 1 x 400 g (14 oz) can crushed tomatoes
  • 30 g (⅓ cup) grated Parmesan

Instructions

  1. Begin by bringing a large pot of water to a boil. Add a liberal amount of salt and cook the pasta until al dente, according to the package instructions. Be sure to reserve a cup of the pasta water before draining.
  2. In a large, deep pan or Dutch oven, heat the olive oil over medium heat. Add the prepared Italian sausage and cook for 4-5 minutes until browned, breaking it apart as it cooks.
  3. To the same pan, add the diced onion and sliced bell peppers. Continue sautéing for approximately another 5 minutes, stirring occasionally, until the vegetables have softened.
  4. Incorporate the chopped garlic, red chili flakes, and Italian seasoning. Cook for another minute, allowing the flavors to meld.
  5. Add the tomato paste, chicken stock, and crushed tomatoes to the pan. Mix well to combine all ingredients evenly and simmer the mixture on low-medium heat for 10 minutes, stirring occasionally.
  6. Toss the cooked pasta into the sauce, combining thoroughly. Stir in the grated Parmesan cheese and season the dish to taste. Serve the pasta piping hot, garnished with additional Parmesan if desired.
