The combination of sweet fruit and the rich, soft burrata creates a perfect balance, while the fresh basil, crunchy pistachios, and tangy balsamic glaze add layers of complexity and texture.
Ingredients
2 cups baby salad greens
2 fresh peaches, pit removed and thinly sliced
⅛ cup thinly sliced red onion
4 cups mixed berries (cherries, blackberries, strawberries)
¼ cup roasted salted pistachios
½ cup loosely packed fresh basil leaves
8 oz. ball burrata cheese
Sea salt and black pepper to taste
Extra virgin olive oil or Meyer lemon-infused olive oil
Balsamic glaze
Instructions
Begin by arranging a bed of salad greens on a large platter.
Thinly slice the peaches, grouping several slices together and fanning them out slightly. Arrange these in various sections over the salad greens.
Pit the cherries and slice them in half. Place small clusters of cherries and blackberries around the platter. Remove the stems from the strawberries and slice them in half. Scatter the strawberry halves across the platter, arranging them to create a visually appealing display.
Sprinkle the sliced red onions and fresh basil leaves evenly over the entire platter.
Drain the liquid from the burrata cheese and place the ball in the center of the peach and berry arrangement.
Season the salad with sea salt and black pepper to taste. Squeeze half a lemon over the salad for added brightness.
Drizzle the salad with lemon-infused olive oil and balsamic glaze.
To serve, gently tear open the burrata ball, allowing the creamy interior to mix with the fruit and greens. Scoop portions of the peaches, berries, and burrata onto individual salad plates and enjoy.
