1/2 cup butter, 1 stick
3/4 cup granulated sugar
1/4 cup brown sugar, packed
1 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1 & 1/2 cups all-purpose flour, spooned and leveled
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup seedless jam
Extra jam, for topping baked cookies
Melted peanut butter, for garnish
Chopped peanuts, for garnish


Instructions

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or a silicone baking mat.
In a large bowl or stand mixer, cream the butter until smooth. Add granulated and brown sugars, beating until fluffy.
Mix in the peanut butter, then the egg and vanilla, ensuring each ingredient is well incorporated.
Combine the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients, mixing until just combined.
Shape the dough into 1 and 1/2 inch balls and place on the prepared sheets, spaced adequately apart.
Press down each dough ball with a fork dipped in sugar to prevent sticking, creating a criss-cross pattern.
Spoon a small amount of jam onto the center of each cookie.
Bake for 13-15 minutes or until the edges are just turning golden.
Allow to cool on the pan for 5-10 minutes before transferring to a wire rack. Enhance with additional jam and a drizzle of melted peanut butter before serving.
