  • 2 cups crisped rice cereal (Rice Krispies)
  • 1 ½ cups crunchy (all-natural, unsweetened) peanut butter
  • 1 teaspoon vanilla extract
  • 1 Tablespoon maple syrup
  • 16 ounces semi-sweet or dark chocolate chips

Instructions

  1. Line a baking sheet with parchment paper. In a medium-sized bowl, combine the rice cereal, peanut butter, vanilla extract, and maple syrup. Mix thoroughly using a rubber spatula until well blended.
  2. Using a 1-inch cookie scoop, portion out the mixture and place the scoops onto the lined baking sheet. Refrigerate these balls to firm up while you prepare the chocolate coating.
  3. Place the chocolate chips in another medium-sized bowl. Microwave them on high for 30 seconds, stir well, and repeat until the chocolate is almost fully melted. Be cautious to avoid overheating. Continue to stir until the chocolate is smooth and reaches a neutral temperature.
  4. Dip each peanut butter ball into the melted chocolate using a fork. Let the excess chocolate drip off by tapping the fork against the bowl’s edge. Place each coated ball back onto the parchment paper.
  5. Allow the chocolate to harden completely at room temperature or refrigerate for 10 minutes to accelerate the setting process.
