1 stick Butter, softened
1/2 cup Peanut Butter
1/2 cup Sugar
1/2 cup Brown Sugar
1 teaspoon Vanilla
1 Egg
1/4 teaspoon Salt
1 teaspoon Baking Soda
2 cups Flour
Extra Sugar to roll cookie balls in
1 cup Ghirardelli Milk Chocolate Chips
Powdered Sugar, to sprinkle on top of cookies


Instructions

Preheat oven to 350°F (175°C). Line a cookie sheet with parchment paper.
In the bowl of a stand mixer, mix the butter, peanut butter, sugar, and brown sugar until creamy and smooth. Add the vanilla and egg, blending well.
In a separate bowl, mix together the flour, salt, and baking soda. Gradually add this to the mixing bowl, blending between additions until a smooth dough forms.
Roll the dough into tablespoon-sized balls, then roll in extra sugar and place on the prepared cookie sheet.
Bake for 10 minutes, or until cookies are golden brown and begin to crack. Remove from oven and gently flatten the centers with the bottom of a flat glass. Allow to cool on the cookie sheet for about 5 minutes, then transfer to a wire rack to cool completely.
Melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between, until smooth. Spoon the melted chocolate into the center of each cookie.
Let the cookies sit for about an hour until the chocolate sets. Once set, sprinkle powdered sugar over the cookies.
