  • 2 teaspoons baking powder
  • 1/4 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2/3 cup whole milk, room temperature

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (177°C). Grease an 8-inch round cake pan generously with nonstick cooking spray or butter.
  2. Prepare the Pecan Topping: In a medium saucepan over medium heat, melt the butter. Add brown sugar and corn syrup, stir until the sugar has completely dissolved. Remove from heat and stir in vanilla extract, kosher salt, and pecans. Spread this mixture evenly in the bottom of the prepared cake pan.
  3. Mix Dry Cake Ingredients: In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
  4. Cream Butter and Sugar: Using a stand mixer or a hand mixer in a large bowl, cream the room temperature butter and granulated sugar until smooth. Beat in the egg and vanilla extract until well combined, making sure to scrape the bowl sides.
  5. Combine with Dry Ingredients: Gradually add the dry ingredients to the butter mixture alternately with milk, beginning and ending with the flour mixture. Stir until just combined and avoid over-mixing.
