  • 1 tbsp baking powder
  • ½ tsp ground cinnamon
  • ½ cup sugar
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  • 8 tbsp cold butter
  • ¾ cup buttermilk
  • 1 cup Fisher pecans, chopped
  • 1 ½ cups corn syrup
  • 2 tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 3 eggs, room temperature
  • ¾ cup light brown sugar, packed
  • 2 cups Fisher pecans, chopped
  • ⅛ tsp ground allspice
  • ½ tsp kosher salt

Instructions

  1. Step 1: Preheat and Prep Preheat the oven to 375°F. Generously butter a 7×10 inch baking dish, ensuring it’s at least 2 ½” high to accommodate the cobbler.
  2. Step 2: Mix the Filling In a large bowl, combine all the Pecan Pie Filling ingredients. Stir until everything is evenly mixed and pour it into the prepared baking dish.
  3. Step 3: Prepare the Cobbler Topping In a separate bowl, combine the dry ingredients for the cobbler. Using a pastry cutter, cut the cold butter into the mixture until you have pea-sized crumbs. Gently stir in the buttermilk until just combined, being careful not to overmix.
  4. Step 4: Assemble the Cobbler Scoop equal-sized portions of the cobbler dough and gently place them on top of the pecan pie filling in the dish.
  5. Step 5: Bake Place the dish in the oven and bake for 40-45 minutes, or until the cobbler topping is golden and set.
