Ingredients
Scale
- 1 Homemade pie crust
- 1 ½ cups toasted pecans (1 cup coarsely chopped, ½ cup kept whole)
- 2 large eggs
- ½ cup unsalted butter (1 stick), melted and cooled
- 1 cup packed dark brown sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Prepare your homemade pie crust following your favorite recipe. Chill, roll out, and fit the dough into a 9-inch pie plate without pre-baking.
- Distribute the coarsely chopped pecans evenly across the bottom of the pie crust. Chill the pie shell in the refrigerator while you prepare the filling.
- Set your oven temperature to 400°F to ensure it’s ready for baking.
- In a large bowl, whisk together eggs, melted butter, dark brown sugar, vanilla extract, and salt until the mixture is smooth, thick, and creamy.
- Pour the filling over the chopped pecans in the pie crust. Artfully arrange the whole pecans on top of the filling.
- Place the pie in the preheated oven and bake for 10 minutes at 400°F. Reduce the temperature to 350°F and continue to bake for 35 to 45 minutes, or until the filling is just slightly jiggly in the center. If necessary, cover the pie with foil to prevent over-browning.
- Allow the pie to cool completely on a wire rack for 2 to 4 hours to let the filling set properly. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
