2 cups chopped pecans
1 1/4 cups all-purpose flour
4 large eggs
2 cups packed brown sugar
1 tablespoon vanilla extract
3/4 cup vegetable oil
1 scant teaspoon salt
Powdered sugar (optional, for dusting)


Instructions

Preheat your oven to 350°F (175°C). Grease a 13×9-inch baking pan with butter or cooking spray.
In a large mixing bowl, add the eggs, brown sugar, and vanilla extract. Mix for about 2 minutes until the mixture is completely smooth and slightly foamy. You can do this by hand with a whisk or use an electric mixer set to medium speed.
Add the vegetable oil and salt to the mixture and stir until well combined. Gradually mix in the flour until fully incorporated.
Fold in the chopped pecans until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan, spreading it out evenly.
Bake at 350°F (175°C) for 30-40 minutes, or until the cake starts to brown around the edges and is set in the center.
Allow the cake to cool in the pan completely. Once cooled, cut the cake into 24 squares.
If desired, dust the top of the cake squares with powdered sugar before serving.
Storage: Store the cake squares at room temperature in an airtight container.
