  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (177°C). Prepare two baking sheets by lining them with parchment paper or coating them with non-stick spray.
  2. In an electric mixer with a paddle attachment, beat the butter and sugar until smooth. Incorporate the vanilla, then gradually add flour. Mix at low speed until just combined, then increase to high speed to form a thick, soft dough.
  3. Roll the dough into 1-inch balls and arrange them 1 inch apart on the prepared sheets.
  4. Combine brown sugar, corn syrup, melted butter, and vanilla in a mixing bowl. Add chopped pecans and mix thoroughly.
  5. Make an indentation in each dough ball using your thumb. Fill each indentation with about 1/2 teaspoon of pecan pie filling.
  6. Bake for 16-18 minutes until the filling caramelizes slightly and the cookies turn a light golden brown. If the filling spills out, spoon it back into the cookies while they are still warm.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
