Ingredients
1 cup coconut milk
1/4 cup chia seeds
1 teaspoon agave syrup

3/4 cup chopped pineapple
2 tablespoons unsweetened coconut flakes
Instructions
In a medium-sized bowl or container, whisk together the coconut milk, chia seeds, agave syrup, and vanilla extract until well combined. Cover and refrigerate overnight, allowing the chia seeds to absorb the liquid and thicken.
Just before serving, blend the chopped pineapple in a food processor or blender until it reaches a smoothie-like consistency.
To serve, divide the chia pudding and pineapple puree evenly, layering them alternately in serving glasses or bowls. Top with unsweetened coconut flakes for a final touch.
