398 mL canned crushed pineapple, very well drained
8 ounces cream cheese, softened
2 cups unsweetened fine desiccated coconut
1/2 cup graham cracker crumbs
1 (3-ounce) packet pineapple jello


Instructions

In a large mixing bowl, add the room temperature cream cheese. Use a mixer to beat the cream cheese until smooth and creamy, ensuring there are no lumps.
Add the drained crushed pineapple, 1 cup of the coconut, the graham cracker crumbs, and the packet of pineapple jello powder directly into the bowl with the cream cheese. No need to prepare the jello separately.
Mix all the ingredients together until they are thoroughly combined.
Place the bowl in the refrigerator for one hour to allow the mixture to firm up.
Once chilled, portion the mixture into tablespoon-sized amounts and roll into balls.
Roll each ball in the remaining cup of coconut until fully coated.
