2 small fresh pineapples

1 1/4 cups low-fat buttermilk

Instructions
Prepare the Pineapples: Peel, core, and slice the pineapples into 1/4-inch thick rings. Pat them dry with paper towels and set aside.
Mix the Batter: In a medium bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt. Stir in the beaten egg, buttermilk, and a splash of vanilla extract until just combined. Avoid overmixing.
