Poffertjes, the beloved Dutch mini pancakes, are a delightful treat perfect for breakfast or brunch. These little puffs are light, fluffy, and cooked to golden perfection in a special pan. Topped with butter and a generous dusting of powdered sugar, poffertjes offer a balance of sweetness and buttery richness that makes them simply irresistible.
Ingredients
1 tbsp dry yeast (approximate)
1 1/2 cup warm milk (90 to 100°F)
1 3/4 cup flour
1 tbsp sugar
1/2 tsp salt
1 egg
Butter (for generously greasing the pan)
Instructions
Warm the milk to lukewarm (90 to 100°F). Dissolve the dry yeast in the milk and let it sit for a few minutes while you prepare the other ingredients.
In a large bowl, mix the flour, sugar, and salt.
Pour the yeast-milk mixture into the flour and add the egg. Stir gently until just combined, being careful not to overwork the batter.
Let the dough rise at room temperature for at least 30 minutes, preferably 1 hour.
Preheat a poffertjes or aebleskiver pan by generously greasing each divot with butter. Heat until very hot, but not smoking.
Fill each divot halfway with batter and cook for 1-2 minutes until the edges start to set. Use a skewer to flip each poffertje and cook for another 1-2 minutes on the other side.
Transfer to a serving plate and serve warm with butter, powdered sugar, or maple syrup.
