1 ½ lbs. potatoes, peeled and cut into medium-sized cubes
1 ½ tablespoons olive oil
½ teaspoon salt
⅓ teaspoon pepper
½ tablespoon taco seasoning
½ tablespoon oregano
For the Green Beans:
1 lb. green beans, trimmed
½ tablespoon olive oil
4 garlic cloves, minced
¼ teaspoon salt


Instructions

Prepare the Potatoes:
Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the peeled and cubed potatoes with olive oil, salt, pepper, taco seasoning, and oregano. Toss everything together until the potatoes are evenly coated with the seasoning.
Bake the Potatoes:
Spread the seasoned potatoes out in a single layer on a large baking sheet, ensuring that the cubes do not touch each other. Bake in the preheated oven for 15 minutes.
Prepare the Green Beans:
While the potatoes are baking, add the green beans to the same mixing bowl (no need to wash it). Add the olive oil, minced garlic, and salt. Stir until the green beans are well coated.
Combine and Bake:
After 15 minutes, remove the potatoes from the oven and add the seasoned green beans to the baking sheet. Gently mix everything together and spread the mixture evenly on the baking sheet. Return to the oven and bake for an additional 20-30 minutes, or until both the potatoes and green beans are cooked through and slightly crispy.
Serve:
