  • 1 teaspoon vanilla extract
  • 2 cups pecan halves, roughly chopped

Instructions

  1. Prepare the Fudge Base In a medium saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir the mixture constantly for about 5-8 minutes until the chocolate is completely melted and the mixture is smooth.
  2. Set the Fudge Base Transfer the melted white chocolate mixture into a greased and lined 9 x 13-inch baking dish. Spread it evenly across the bottom of the dish and set aside as you prepare the praline mixture.
  3. Start the Pralines In a large heavy-bottomed pot, whisk together the granulated sugar, brown sugar, salt, evaporated milk, and butter. Place it over medium-high heat and stir until the sugars dissolve and the mixture reaches a boil.
  4. Cook the Praline Mixture Continue cooking, stirring constantly until the candy thermometer reads 235°F, indicating that it has reached the softball stage.
  5. Finish the Pralines Remove the pot from heat and let the mixture cool for 5 minutes. Then, stir in the vanilla extract and chopped pecans. Keep stirring until the mixture begins to thicken and lose some of its glossiness, ensuring it doesn’t become too grainy.
  6. Combine Layers Carefully scoop the praline mixture over the set white chocolate layer in the baking dish. Spread it out to form an even layer.
  7. Finishing Touches Use a rubber spatula to gently merge the layers, creating a marbled effect by slightly mixing the top praline layer with the white chocolate beneath. Smooth the surface evenly with the spatula.
  8. Cool and Cut Allow the fudge to cool completely at room temperature. Once set, cut the fudge into 1-inch squares for serving.
