Pumpkin Bread

1 & 3/4 cups all-purpose flour, spooned and leveled
2 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 large eggs, at room temperature
2/3 cup brown sugar
1/3 cup white sugar
1/2 cup vegetable oil
1 & 1/4 cups pumpkin puree
1 tsp vanilla extract
1/4 cup milk
Streusel Topping

3/4 cup all-purpose flour
1/3 cup brown sugar
1 tsp ground cinnamon
3 tbsp white sugar
5 tbsp salted butter, melted


Instructions

1️⃣ Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper, making sure the parchment hangs over the edges for easy removal. 🏁

2️⃣ In a medium-sized bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Set this dry mixture aside. 🥄

3️⃣ In a large bowl, combine the eggs, brown sugar, white sugar, vegetable oil, pumpkin puree, vanilla extract, and milk. Mix until well combined. 🍯

4️⃣ Add the dry ingredients to the wet mixture. Gently fold together using a rubber spatula, being careful not to overmix. Stop as soon as the flour is fully incorporated. 🚫

5️⃣ Pour the batter into your prepared loaf pan, spreading it evenly. 🍞

6️⃣ For the streusel topping, in a medium-sized bowl, whisk together the white sugar, brown sugar, flour, and cinnamon. Add the melted butter and mix until it forms a crumbly texture. 🧈

7️⃣ Sprinkle the streusel topping evenly over the batter in the loaf pan. 🍂

8️⃣ Bake for about 65 minutes, or until a toothpick inserted into the center comes out clean. 🕒

9️⃣ Allow the loaf to cool to room temperature before removing it from the pan. Slice and enjoy! 😋
