Ingredients

Scale
  • 1 box yellow cake mix
  • 4 large eggs (1 egg and 3 eggs separated)
  • 8 ounces unsalted butter (2 sticks melted)
  • 1 1/2 cups pumpkin puree
  • 8 ounces cream cheese (super soft)
  • 1 tbsp vanilla extract
  • 1 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp ground ginger

Instructions

  1. Step 1: Preheat the oven to 350 degrees F. Line a 9″ or 10″ round cake pan or springform pan with parchment paper and grease it with cooking spray.
  2. Step 2: In the bowl of an electric mixer, combine the yellow cake mix, 1/2 cup melted butter, and 1 egg. Blend until smooth and pour into the prepared pan to form a base.
  3. Step 3: In a clean mixer bowl, blend the pumpkin puree, cream cheese, 3 eggs, remaining 1/2 cup melted butter, brown sugar, vanilla extract, cinnamon, ginger, and nutmeg. Mix until smooth and pour over the cake base.
  4. Step 4: Bake in the preheated oven for 40 to 50 minutes until golden brown and slightly gooey in the center.
  5. Step 5: Allow the cake to cool in the pan for at least 10 minutes before slicing to let the layers set properly.
