Layer 1:
1 cup all-purpose flour
½ cup butter, softened
¾ cup chopped pecans
Layer 2:
8 ounces cream cheese, softened
1 cup powdered sugar
1 cup whipped topping
Layer 3:
2½ cups milk
3 (3.4-ounce) packages white chocolate (or vanilla) instant pudding mix
1 (15-ounce) can pumpkin puree
1 teaspoon pumpkin spice
1 cup whipped topping
Layer 4:
1 cup whipped topping
¼ cup chopped pecans (for topping)


Instructions

Layer 1:
Preheat your oven to 350°F (175°C). Mix the flour, softened butter, and ½ cup of chopped pecans together until well combined. Press the mixture into a greased 9×9-inch pan. Bake for 15 minutes, then remove from the oven and let cool completely.
Note: If using a 9×13-inch pan or if you prefer a thicker crust, increase the crust ingredients by adding an additional ½ cup flour, ¼ cup butter, and ¼ cup chopped pecans.
Layer 2:
In a medium bowl, blend the softened cream cheese with the powdered sugar until smooth. Fold in 1 cup of the whipped topping. Spread this mixture evenly over the cooled crust.
Layer 3:
In a large bowl, mix the milk, instant pudding mix, pumpkin puree, pumpkin spice, and 1 cup of whipped topping until smooth and well combined. Spread this mixture over the cream cheese layer.
Layer 4:
Spread the remaining 1 cup of whipped topping over the top of the pumpkin layer. Sprinkle with the remaining ¼ cup of chopped pecans.
Chill:
Cover the pan and refrigerate for at least 3 hours or until the dessert is set. Serve chilled and enjoy!
