  • 1 cup (245 g) pure pumpkin
  • 2 teaspoons vanilla extract
  • 2 ½ cups (285 g) all-purpose flour
  • 2 teaspoons cornstarch
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon nutmeg
  • Topping:
  • 3 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (177°C) and line a 9×9-inch baking dish with parchment paper.
  2. Mix melted butter and brown sugar in a large bowl, then add pumpkin puree and vanilla extract.
  3. Combine flour, cornstarch, pumpkin pie spice, baking powder, salt, and nutmeg in a separate bowl.
  4. Fold dry ingredients into wet ingredients until just combined.
