Combining the delicate sweetness of crab meat with the tangy bite of Dijon mustard and the creamy texture of crème fraîche, these melts offer a symphony of flavors. Ingredients

½ cup white crab meat
1 tsp Dijon mustard
2 tablespoons finely chopped red pepper
1 tablespoon finely chopped celery
2 tablespoons crème fraîche or sour cream (low fat is fine)
Salt and pepper to taste
4 slices of Monterey Jack, Swiss cheese, or Pepper Jack for a spicy kick
A 45 inch slice of baguette, or 2-3 pieces of long French bread or ciabatta, halved lengthwise (ordinary sliced bread should be toasted first)


Instructions

Preheat the oven to 350°F (175°C) or prepare the broiler/grill. Place the bread halves on a baking sheet and heat for about 5 minutes, or until they start to brown slightly.
In a bowl, combine the crab meat with Dijon mustard, chopped red pepper, and celery.
Mix in crème fraîche or sour cream, and season with salt and pepper to taste.
Evenly spread the crab mixture over the bread halves and top with cheese slices.
Return to the oven or broiler/grill for 5-10 minutes, or until the cheese is bubbling and golden.
Let cool slightly before serving. Serve each half of ciabatta or panini to individuals, or cut into smaller pieces for hors d’oeuvres.
