Ingredients
2 cups cooked jasmine rice, preferably a day old
1 green onion, finely chopped
2 and 1/2 tablespoons regular soy sauce (not dark)
1/2 tablespoon sesame oil
4 eggs, beaten
2 tablespoons avocado oil or vegetable oil
Instructions
Heat 1 tablespoon of avocado oil in a steel wok over medium-high heat until it begins to smoke. For non-stick pans, heat the oil on medium without letting it smoke.
Pour in the beaten eggs, quickly stirring to form shape but keeping them slightly moist.
Add the rice, breaking any clumps, and toss thoroughly with the eggs.
Push everything to the side, add the remaining oil, and then the green onions into the empty space. Stir them into the rice and egg mixture.
Mix in the soy sauce and sesame oil, stirring until the rice grains are evenly browned.
Remove from heat immediately and serve hot.
