Description
Raspberry Brownie Parfaits are a quick and decadent dessert that layers rich, fudgy brownie chunks with creamy chocolate pudding and fresh, juicy raspberries. The combination of flavors and textures creates a delightful treat that’s as beautiful as it is delicious.
Ingredients
1 (5.85 ounce) box instant chocolate pudding mix
3 cups cold 2% milk
1 (8 ounce) container whipped topping (such as Cool Whip), thawed
6–8 brownies, cut into chunks (store-bought brownie bites work well)
2 cups fresh raspberries
Instructions
Prepare the Pudding: In a medium bowl, whisk together the pudding mix and cold milk for 2-3 minutes, or until the mixture begins to thicken.
Fold in Whipped Topping: Gently fold the thawed whipped topping into the pudding mixture until just combined. Set aside.
Assemble the Parfaits:
Spoon about ¼ cup of the pudding mixture into the bottom of each glass or small jar.
Place about ¼ cup of brownie chunks on top of the pudding, followed by a layer of fresh raspberries.
Repeat the layers with another layer of pudding, brownie chunks, and raspberries in each glass or jar.
If using a medium trifle dish, repeat the layering process, ending with a layer of pudding on top.
Serve or Refrigerate: Serve the parfaits immediately or refrigerate them until ready to serve.
