Directions:

1. Prepare the Raspberry Powder:
Start by placing the freeze-dried raspberries in a food processor and pulse them until they become a fine powder. Sift the raspberry powder through a fine-mesh sieve to remove any seeds, and set the powder aside in a small bowl.

2. Make the Truffle Base:
In a large heatproof bowl, combine the white chocolate chips and small pieces of butter.

  • Heat the heavy cream in a small saucepan over low heat until it just begins to simmer—avoid letting it boil.
  • Pour the hot cream over the white chocolate and butter mixture. Let it sit for 5 minutes to allow the heat to melt the chocolate and butter. Slowly stir the mixture until smooth and fully combined.
