3 tbsp cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups milk
2 tbsp vinegar
1/2 cup sugar
2 large eggs
1 1/2 tbsp red food coloring
2 tsp vanilla extract
1/3 cup salted butter, melted
Cream Cheese Glaze:
6 oz cream cheese, softened
6 tbsp butter, softened
2 cups powdered sugar, sifted
1/2 cup milk
1/2 tsp vanilla extract


Instructions

In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a liquid measuring cup, combine milk and vinegar to create homemade buttermilk. Let rest for 2 minutes.
Pour buttermilk into a large bowl. Add sugar, eggs, red food coloring, vanilla, and melted butter. Stir until smooth.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Preheat a griddle over medium-low heat. Grease with butter or non-stick spray. Pour 1/4 – 1/3 cup batter per pancake. Cook until bubbles form on the surface, then flip and cook until done.
