For The Pancakes:

2 cups (10 oz) all-purpose or plain flour
¼ cup (2 oz) granulated sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
2 cups (470 ml) buttermilk
¼ cup (2 oz) butter, melted
1 large egg
2 teaspoons pure vanilla extract
12 teaspoons red food coloring
For The Cream Cheese Frosting:

6 oz cream cheese
¾ cup powdered sugar
¾ cup heavy whipping cream
1 tablespoon vanilla extract


Instructions

In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Create a well in the center, then add buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth, adjusting consistency with extra buttermilk if too thick.
Preheat a nonstick pan over low-medium heat. Lightly grease with cooking spray or butter.
Pour ¼ cup of batter onto the pan, spreading into a round shape. Cook for 3-4 minutes until bubbles form, then flip and cook for another 2-3 minutes.
Serve with cream cheese frosting, fresh berries, chocolate chips, and powdered sugar.
